I backpacked to Australia and New Zealand in 2013, stayed in Sydney at my friend’s place for a couple of days. She bought caramel cashew from QVB and I could not forget the taste after years. Thinking it would be easy to make caramelized nuts on my own, I tried and it was a success - for 1 day, not knowing Hong Kong’s hot and humid air could melt the caramel coat.
After experimenting on caramelizing natural sugars of different properties, I have found THE perfect combination, tasty and more resistant to heat and moisture, and I would love to share with the world this taste of edible happiness.

Sorry, we do not use artifical caramel syrup. The real caramel gives us enchanting smoky bitter sweets, and the sweetness always wins. C'est la vie.
